Sundays are sweet, slow, and so full of gratitude. Gratitude for home, for family, for my struggles, and for my successes. And, of course, gratitude for these Persimmon Nut Pancakes. Simply make pancakes of your choice (I used @bobsredmill buttermilk whole grain mix) and sauté persimmon pieces in coconut oil and cinnamon. Top your pancakes with @wild_friends sugar cookie pb, the persimmon pieces, and @cawalnuts. Then, enjoy!
